A few years ago, probably very few people would have imagined one of the most daring food trends today: the raw food diet. This type of food is a philosophy and a way of life based, from the food point of view, on an abundant consumption of vegetables, mainly leafy; fruits; nuts; beansprouts; legumes and seeds; among others.

We offer you some recipes for a crudivorous menu

Although these habits could be associated with a vegan diet, what makes the difference is that all the food is eaten raw. This means they are not cooked or heated above 47ºC.

Most raw foodists do not eat any products that come from animal origin, but there are those who follow a raw, egg/dairy-vegetarian diet, with the corresponding addition of raw eggs, unpasteurised dairy products and apiculture products (honey, bee pollen and propolis). At the same time, there is another group of people who adapt the latter version by adding fish and raw meat.

Opting for raw recipes involves reorganising the purchase of fresh produce and giving the pantry a good cleaning out!

 Our shopping list must include:


• Fresh and frozen vegetables.
• Fresh and frozen fruits.
• Beansprouts.
• Germinated legumes, or dried legumes to germinate.
• Raw nuts (whole and ground).
• Activated nuts.
• Seaweed.
• Raw fermented foods: sauerkraut, yoghurts derived from nut milks, coconut, kefir, water, raw milk, coconut milk, raw pickles.




• Fats: coconut, pumpkin, avocado, extra virgin olive, linseed, sesame, butter and spreads derived from seeds and nuts.
• Aromatic herbs: parsley, mint, cilantro, peppermint or thyme.
• Powdered turmeric, ginseng, aloe vera juice.
• Rice, apple or balsamic vinegar.
• Sea salt, herbal salts and garlic, freshly ground black pepper.
• Coconut sugar, maple syrup, stevia, raw honey and bee and flower pollen
• Dehydrated products.
• Raw chocolate powder, derivatives such as cocoa butter.
• Meat, unpasteurised dairy, eggs and fish.

It is important to take precautions regarding food safety when including meat, fish, dairy and raw eggs in the diet, always choosing products with guarantee of origin and quality.

Regarding the type of dishes, dehydrated foods give you a lot of leeway, as food can be dried below 47ºC, giving them appearance of being cooked. In this way pizza bases, vegetable chips, etc. can be made, and all without losing out on valuable vitamins or minerals.

Another interesting preparation is beansprouts, which are obtained from soaking seeds, offering more vitamins and improving digestion. It is estimated that from about 175 grams of dried seeds or legumes, you can get between 350 and 525 grams of sprouts.

On the other hand, pickles also become another interesting option, offering a touch of acidity and sourness to a dish, since they are usually prepared with vinegar. In the case of fermentation, water, salt and a fermented product or yeast is used. The best-known dish is sauerkraut, whose main ingredient is cabbage.
