Cream cake with pineapple and orange

Ingredients for 4 people:  

Short pastry, castor sugar, 1 orange, 1 pineapple, 10grs butter, 1 egg white, 50grs sugar


For the custard: 250ml milk, 4 eggs yolks, 40grs sugar, 20grs cornflour

PREPARATION

1. Prepare the fruit: Peeled and sliced orange; 100 g chopped pineapple, and rest in slices.

2. Beat the yolks with the sugar and cornflour in a bowl.

3. Put milk in a pan to heat, and when it starts to boil, add the yolks and stir well until you have a custard consistency.

4. Sprinkle castor sugar onto the short pastry, cut it into a circle, and put it in a mould.

5. Fill with custard, mixed with chopped pineapple, and bake in the oven for 20 minutes at 180º.

6. Take out of oven and place some slices of orange and pineapple on top, add  a little butter and sprinkle a pinch of sugar.

7. For the merengue, beat the egg white with the sugar until stiff, decorate the cake and grill for 1 minute.
