Pilar Mateo is an internationally renowned scientist. She is among the 10 most prestigious scientists in Spain and among the top 100 in the world. This Valencian woman has worked for the last 22 years on eradicating endemic diseases linked to poverty in disadvantaged countries. She has patented a pest control insecticide paint which has shown to be effective to combat Chagas disease, malaria or dengue. Her work has always had a humanitarian spirit. Pilar Mateo has carried out numerous social projects to improve the quality of life of impoverished communities.

COFFE

Savouring and enjoying a good coffee is essential every morning. It’s true that many of us now buy capsules for automatic coffee machines, but I love the aroma of recently ground coffee beans.  If I have a choice, I prefer the Arabica variety and it’s even better if they come from Columbia. Since I discovered it, many years ago, on one of my trips to this country, it has become my favourite coffee.

TROPICAL FRUITS

Pineapple, mango, avocado, passion fruit, tamarind.... I couldn’t choose just one! Because of my work, I am lucky enough to travel to tropical countries where you can find the most exotic and exquisite fruit. To be able to savour each bite of any of these tropical fruits in Spain is a real privilege and, if I find them in my trusted supermarket, I always include them in my shopping basket.

RED WINE

What is better than raising a toast with those you love the most? Wine has become a cultural addition to our food. On my table, there always has to be a good bottle of red wine. Varieties such as Tempranillo, Garnacha or Monastrell  form part of the essentials of my wine cellar. Drinking wine, always in moderation, can provide significant anti-oxidant health benefits.

RICE

As the true Valencian that I am, I must have rice in my diet, especially, bomba rice, a round-grained rice with Valencian Denomination of Origin. What would Sunday be like without a good paella shared with family and friends? A tradition that forms part of our culture and which lives on from generation to generation.

SERRANO HAM

As well as Valencian, I also have Aragonese blood running through my veins. My father was born in Villel, in a small village of the province of Teruel, and I have fond memories of the meals with a good slice of toasted bread accompanied with the local ham. It’s always on my shopping list!
