Toast with goat’s cheese and rocket pesto
Ingredients for 4 people4 slices of bread or toast, 1 goat’s cheese roll, 40 g rocket, 30 g Parmesan cheese, 10 g almonds, 60 ml mild olive oil, 100 g sundried tomatoes, Salt

1. Cut the slices of bread and toast them if you prefer
2. For the pesto, crush 25 g rocket, 30 g Parmesan cheese, 10 g almonds, 60 ml mild olive oil and salt to taste.
3. Spread the pesto on the bread or toast, place the sliced goat’s cheese on top and decorate with some pieces of sundried tomatoes or rocket leaves.
Keep for up to 3 days in a closed container in the fridge!
