Creamy cabbage salad 

Ingredients (4 people)


200 g kale
125 g white cabbage
120 g carrot
80 g white onion

For the dressing:
60 ml water
20 ml apple cider vinegar
20 g Dijon mustard
20 g maple syrup
20 g sesame paste (tahini)
Salt and pepper

Preparation

Prepare the salad by cutting the carrot, kale and cabbage in julienne strips and chopping the onion well. Then mix all the ingredients and mix well by hand.


Place the mixture in a bowl and add the ingredients for the dressing, previously mixed. Remove and season to taste.

Mushroom dumplings

Ingredients (4 people)

140 g chopped Portobello mushrooms
100 g walnuts
60 g dried tomatoes in oil
60 g chopped almonds
30 g ground flax seed
30 g seedless, soft dates
5 g parsley
2 g ground cumin
5 ml of apple cider vinegar
1 clove garlic
Salt


Preparation

Place the mushrooms and walnuts in a chopper and chop them a little, until they are broken into pieces. Add the rest of the ingredients, except for the chopped almonds, and chop again until you have obtained a slightly lumpy paste.  Set aside in the fridge for about 30 minutes.

Shape small balls with the paste and cover with chopped almonds.

Place on a non-stick sheet and dehydrate at 46 ° C for 2 hours, turning halfway through the process. Serve along with fresh salad.

Chocolate biscuits

Ingredients (16 units)

150 g dry dates, soft, seedless
150 g cashews
125 g almonds
60 g chia seeds
40 g maple syrup or coconut
15 g raw cocoa powder
2 g of vanilla extract
40 ml coconut oil


Preparation

Place the nuts in a chopper until they are finely chopped.  Add the rest of ingredients and chop to a paste. If the mixture is very dry, add a little water.


Spread the dough and shape the biscuits with the help of a mould. They can be consumed soft, refrigerated or dehydrated. In the latter case, you should put them in the oven at less than 48 ºC for 6 hours and then rotate them and leave them for another 6 hours to become crisp.
