For a few years now, the avocado has become the queen fruit (yes, fruit) of breakfasts. Its versatility, as well as the benefits it has from a nutritional point of view, have made it a popular breakfast ingredient. 

The avocado is a very interesting fruit; while most fruits are made up of carbohydrates, the avocado has healthy fats. These healthy fats help reduce bad cholesterol and increase good cholesterol, and therefore have a beneficial effect on cardiovascular health. Thus, the moderate consumption of avocado, when combined with physical activity and a balanced diet, is good for the heart. 

This fruit stands out as a source of vitamins, mainly vitamin E, and is also associated with improving the absorption of "carotenoids", which are antioxidant compounds found in foods such as pumpkin, carrot, tomato, etc. In addition, its dietary characteristics make it a food that protects our intestinal microbiota (the set of microbes that live in our intestines).

It is true that, despite having many benefits, avocado is still a caloric food due to its fat content. For that reason, it is important to find a balance and combine breakfast with other varied and healthy foods. 

 Avocado toast is something that has already been established in many people's homes, but it is also the choice of many when we decide to have brunch away from home. So, let's learn about different recipes to combine avocado in a healthy and delicious way. 


Toast with avocado and egg

If you have time in the morning, toast with avocado and egg is a good choice to start the day strong and not snack between meals. Avocado combines wonderfully with egg, in this case, with a poached egg and if possible, with cereal bread. 

For this recipe, we will need: 

  • 2 slices of whole grain bread

  • 1 avocado

  • 2 eggs

  • black pepper

  • extra virgin olive oil

  • salt

  • lime juice (optional)

Preparing toast is not complicated, but the trick is to take care of the details to get the perfect mouthful. 

To make this healthy breakfast with avocado, the first thing to do is cook the eggs. Put some transparent film in a small bowl, add a few drops of oil and then crack the egg into it. Top with a pinch of salt and pepper to give it flavour and make a little bag with the film, which will later be boiled in a saucepan with water. Once the bag is ready, repeat the process with the other egg. 

Put water in a saucepan and when it boils, put in the knotted bags. Let them cook for 5 minutes without touching the bottom (you can help with a skimmer or with a toothpick and tweezers). Then, take them out and put them under cold water to stop the cooking. 

While the eggs are cooking, prepare the avocado. Open the avocado, remove the stone and cut up the inside. You can prepare it in two ways, crushing the avocado with a fork or leaving it in slices. After this add salt and pepper and, if you fancy a touch of citrus, add a few drops of lime juice. In addition, the lime will prevent the avocado from oxidising. Then, we toast the bread and spread the avocado onto it. 

Finally, take the egg out of the bag, place it on the toast, add oil, salt and pepper to taste and... get your day off to a great start!



Avocado and tomato toast 

This version of avocado and tomato toast may seem simple (which it is), but it is a healthy breakfast that can be made to taste delicious by playing with the textures of the different ingredients: 

  • bread to toast (of our choice)

  • 1 tomato, the variety you most like

  • 1 avocado

  • 1 pinch of salt

  • extra virgin olive oil

  • sesame seeds (optional)

In this recipe, maybe the trick is in the tomato: make sure you buy or get a good tomato, not only for the taste, but because it's also important to know where what we eat comes from. So, let's start with this ingredient. You can serve it grated, sliced or there is the option of using cherry tomatoes, each one will give it its own flavour. 

Once the tomato is ready, toast the bread. Also, if you like the crunchy texture, you can use crackers. Then, as we learned in the previous recipe, spread the avocado onto the toast, add the tomato to your liking, a pinch of salt and finish it off with oil and sesame seeds; they will add a delicious touch!



Avocado and cheese toast

We have already seen that avocado toast can be combined with a wide variety of ingredients. But, in this case, we will choose cheese. And yes, there are so many types of cheese that you don't know which one to choose, but how about feta cheese?

In case you didn't already know, feta cheese is originally from Greece, it is made with sheep's milk and that characteristic salty taste is since it is made by immersing the cheese in brine. After this curious fact, let's move on to the ingredients of the recipe: 

  • loaf bread (of your choice)

  • feta cheese

  • avocado

  • extra virgin olive oil

  • pepper

Choose the bread you like the most (if it one with a lot of breadcrumbs, it will go well with this recipe). While the bread is being toasted, move on to the avocado, but this time do not spread it, but cut it into slices. 

Spread out the slices of this popular fruit over the toast and crumble the feta cheese on top. Finally, add extra virgin olive oil, salt - without forgetting that feta cheese has a lot of salt - and freshly ground pepper. Avocado and cheese toast. What more could you ask for?

  • 1 avocado

  • smoked salmon

Start by crushing the avocado into a creamy and smooth texture, add a little lime juice and a touch of pepper and set aside. After this, toast the bread, spread the avocado cream onto it and place a few slices of salmon on top.
