Stuffed Mushrooms
Ingredients (4 people)
8 large whole mushrooms
80 g cream cheese
20 ml extra virgin olive oil
2 g herbs to taste

Method
Marinade the mushrooms with lemon juice the night before.
Clean the mushrooms well under running water with a brush to remove any dirt and cut off the stalks.
Mix the cheese with the herbs and carefully fill the mushrooms. Then drizzle some olive oil and salt over the top.
Prepare a small foil parcel for each mushroom and place it on the grill of the barbecue. They will take 10 to 15 minutes to cook.

Salmón skewers
Ingredients (4 people)
400 g salmon fillet
40 ml sesame oil
40 ml soy sauce
50 g green pepper
12 cherry tomatoes
Method
Cut the salmon fillet into chunks and remove the skin.
Place the chunks in a bowl and cover with a mixture of two tablespoons of sesame oil and three of soy sauce, and leave to marinade for 30 minutes.
Make up the skewers, alternating each salmon chuck with a cherry tomato and some green pepper, and cook on the grill for two minutes on each side.
To avoid them drying out, when you turn over the skewers, brush them with the marinade to intensify the flavour.

Semi-sweet chicken skewers
Ingredients (4 people)
400 g chicken breast
80 g raw peeled peanuts
3 garlic cloves
120 g onion
40 g sunflower oil
2 dried chilli peppers
2 g ground cinnamon
10 g sugar
100 ml lemon juice
2 l coconut milk
Method
Crush the peeled peanuts.
Chop the onion and the garlic and fry it in a pan with the oil until they become transparent. Add the coconut milk, ground peanuts, sugar, lemon juice, some salt, the chilli peppers and the ground cinnamon. Stir well.
Cook over a low heat for 10 minutes or until it becomes thick and creamy. Blend it in a food mixer so that it becomes smooth.
Cut the chicken fillets into chunks and assemble the skewers, place them on a tray and cover them with the sauce. Leave in the fridge for at least half an hour. Set aside the remaining sauce.
Grill the skewers, adding some more sauce now and then. Turn over halfway through cooking. When they are golden on both sides, remove and serve.
