Cold cheesecake with blueberries

Ingredients for 6 people:

To decorate: 1 short pastry, 20 g castor sugar, 1 egg, Brown sugar, Blueberry jam, For the base250 g digestive biscuits, 100 g butter, For the cheese cream350 g condensed milk, 500 g cream cheese, Juice of 3 lemons

PREPARATION

  1. Make some biscuits with different shaped moulds: sprinkle the short pastry with castor sugar, flatten with the rolling pin, cut out shapes with the moulds, baste with beaten egg, sprinkle with brown sugar, and bake until golden brown.
  2. Beat the cream cheese with the lemon juice and condensed milk.
  3. Crush the biscuits with butter, put the mixture in a mould and press down to prepare the base.
  4. Add the cheese cream onto the base and leave for 25 minutes to cool.
  5. Cover with the blueberry jam and decorate with the biscuits.
