Honey-roast ribs with apple sauce

For 4 servings: 

4 racks of lamb ribs (without the ribbones)

500 ml of orange juice

100 ml of honey

50 g of mustard

1/2 kg of Golden Delicious apples

20 g of butter

6 g of brown sugar

6 ml of lemon juice

A pinch of ground ginger

A pinch of black pepper 

Salt

PREPARACIÓN


PREPARING THE RIBS

 1.     Season the meat.

2.     Spread the honey and mustard on.

3.     Pour the orange juice on.

4.     Place it on a baking tray and roast at 200ºfor 45 minutes.

5.     Leave to cool for 10 minutes.

 

PREPARING THE APPLE SAUCE

 1.     Peel and cut the apples.

2.     Boil them for about 25-30 minutes.

3.     Mash them with the brown sugar, butter, lemonjuice, ginger, black pepper and salt.
