Burrata salad
Burrata salad with asparagus, peas and radish
This Burrata salad is both healthy and quick to make. You will only need a few ingredients, a quick blast in the oven and voilà!
Ingredients
- 100 g asparagus
- 100 g peas
- 80 g pea shoots
- 100 g mixed radish
- 1 Burrata
- Half a teaspoon of lemon juice
- 1 teaspoon extra virgin olive oil
- salt
- fresh mint
- ground black pepper to taste
Method
- Preheat the oven to 200 degrees.
- Cut the bottom off the asparagus and place on a baking tray with a drizzle of olive oil and a pinch of salt. Roast for 15 minutes (turn them over halfway through cooking so they cook thoroughly on all sides).
- Cook the frozen peas in a pan of boiling water. Then, strain and rinse with cold water to retain the colour and ensure they don't keep cooking.
- Chop the radishes into halves and quarters (depending on the size of the pieces).
- Mix the pea shoots, roasted asparagus, cooked peas, radish and fresh mint with the olive oil, lemon juice, a pinch of salt and black pepper. Afterwards, place on a flat dish, crumble the Burrata and place on top of the salad. To finish, spray the salad with a drizzle of olive oil and season with salt and pepper to taste. The only thing left to do now is enjoy it.
Burrata salad, tomato and basil
This dish is a classic recipe with Burrata cheese, where the tomato and basil make the Italian cheese shine even brighter. It's enough to make your mouth water!
Ingredients
- 2 tomatoes
- basil
- 1 Burrata
- 1 spring onion
- salt
- pepper
- virgin extra olive oil
Method
- Wash the tomatoes thoroughly and chop.
- Peel the spring onion and cut into rings.
- Place the onion and tomatoes in a saucepan, and place the Burrata in the middle with a few basil leaves.
- Season with salt, freshly ground pepper and a generous drizzle of extra virgin olive oil.
By the way, among the baked recipes with Burrata cheese, there is one that is very similar to this Burrata salad in a warm version which is very easy to make at home. To make it, you will need cherry tomatoes, a Burrata, basil, crushed garlic, a few garlic cloves, thyme, rosemary, extra virgin olive oil, salt and pepper.
As above, you will need to wash the tomatoes, place them in an ovenproof dish and season them, this time with crushed garlic, salt and pepper, a few rosemary or thyme leaves and olive oil. Preheat the oven to 200 degrees with heat above and below and place the dish with the tomatoes in the oven until they turn golden. Next, remove the tray from the oven, add the Burrata to the centre, chop the garlic with a little basil, rosemary and thyme and drizzle a little olive oil over the Burrata. Place in the oven for another 5 minutes. Remove and serve this delicious dish with toast or crostini, it is a perfect aperitif!

Fettuccine with Burrata and cherry tomatoes

Ingredients
- 400 g whole wheat fettuccine
- 300 g coloured cherry tomatoes
- 2 Burratas
- 1 sprig basil
- pesto
- extra virgin olive oil
- black pepper
Method
- Preheat the oven to 180 degrees with heat top and bottom, but without the fan.
- Cut the cherry tomatoes in half and place on the baking tray. Drizzle with olive oil and season with salt and pepper.
- Place in the oven for 15 minutes until they become tender and set aside.
- Place a pan of water to boil with a handful of salt and add the pasta as soon the water starts to boil. Cook according to the minutes indicated by the manufacturer’s instructions.
- Strain the pasta and spray with olive oil.
- Serve the fettuccini in a dish with a few tablespoons of cherry tomatoes and drizzle with pesto. Finally, add a few pieces of Burrata on top. Scrumptious!
Burrata, rocket and walnut pizza
Burrata with rocket and walnuts also represents an unbeatable combination and it is unrivalled when in pizza form.
Ingredients
- 1 Burrata
- 1 handful rocket
- 1 red onion
- 8 pear tomatoes
- 1 sprig basil
- 10 walnuts
- salt
- pepper
- virgin extra olive oil
Method
- Crush the tomatoes and place in a saucepan on a medium heat with a drizzle of olive oil.
- Cook until the water evaporates, season with salt and pepper and set aside.
- Preheat the oven to 250 degrees with heat top and bottom and place the tray inside at mid height.
- Spread the tomato sauce on top of the pizza dough and add the red onion cut into thin strips.
- Bake the pizza on the tray for 8-10 minutes until the edges turn golden.
- Remove and add the rest of the ingredients, in other words, the Burrata cheese, rocket, walnuts and basil leaves.

Method
- Carefully wash the figs, immediately before preparing the recipe, and cut in half.
