Fuet tartar
For 4 servings:
• 2 thick fuet sausages
• 4 eggs
• 6 pickled gherkins
• 2 medium sized fresh tomatoes
• 1/2 tender onion
• 1 spoonful of mustard
• Ground black pepper
• Tabasco sauce
• Salt
• Extra virgin olive oil
• 1 wedge of Parmesan cheese

PREPARATION
PREPARING THE EGG YOLK
1. Fill a large bowl half full with salt.
2. Separate the egg yolks from the whites and pour them into the bowl.
3. Cover the yolks with salt and leave them to cure for 1 hour.
PREPARING THE PARMESAN CHEESE BISCUIT
1. Grate the wedge of Parmesan cheese
2. Make small mounds on a baking tray.
3. Place the tray in the oven until the mounds melt.
4. Shape each mound into a circle or rectangle using a silicone spatula.
PREPARING THE TARTAR SAUCE
1. Peel the tomatoes and remove the seeds.
2. Finely dice the fuet sausage, the pickled gherkins, onions and fresh tomatoes.
3. Mix all the ingredients together in a bowl and season to taste. Add the mustard and a splash of olive oil.
4. When the mixture is consistent, place 4 serving moulds on 4 plates to serve the dish on and fill each one with the tartar mix.
5. Remove the moulds and place the cured egg yolks and Parmesan cheese biscuit on top.
