Cod brandade: the perfect aperitif

INGREDIENTS (for 2 people):
- 250 g cod
- 500 g potatoes
- 25 ml whole milk EVOO
- 2 garlic cloves
METHOD :
1. In a bowl, place the cod to soak and leave in the fridge overnight, for approximately 12 hours. During this time, change the water a few times.
2. Once it has been unsalted, cut into very small pieces.
3. Meanwhile, cook the potatoes in their skins for 20/30 minutes approximately.
4. At the same time, in a frying pan of hot oil, fry the garlic.
5. When the potatoes are boiling, remove the skin, place them in a bowl and mash with a fork until they are squashed.
6. Add the garlic with the oil and the flaked cod and continue to mash with a fork.
7. Heat the milk for 30 seconds in the microwave, add it to the mixture and stir well until it forms a paste.
8. Now it’s time to gradually incorporate the extra virgin olive oil until the mixture is stuck together well.
9. Before serving, garnish with a few chunks of cod on top, the fresh basil leaves and a drizzle of EVOO.
10. Serve with toast and enjoy the dish!
