How to make almond sauce
Almond sauce is a great accompaniment. But that's not all! Iit also has many medicinal properties and benefits, such as its high vitamin E and fibre content. This sauce is also very simple to make and doesn't require excellent culinary skills.
We'll need these ingredients:
- 150g ground almond
- 2 garlic cloves
- ½ onion
- 3 slices of bread
- 4 spoons of olive oil
- ½ meat stock (a stock cube will also do)
- fried tomato
- 75ml milk
- white wine (optional)
Here's what you do:
- Peel and chop the half onion and garlic cloves. Also cut the slices of bread into small pieces. If you don't have any ground almonds: peel some whole almonds and chop them up as much as possible before crushing them in a mortar.
- Fry the onion in a pan with a litte oil over a medium heat and, when it begins to brown, add the pieces of bread. Using a wooden spoon, stir continuously to prevent the onion pieces from sticking and burning. Once the bread is fried, add the ground or crushed almond until golden brown and then add 3 or 4 tablespoons of white wine, and continue stirring. Remember that adding wine is optional and if you want to prepare the almond sauce for children, you can skip it.
- When the wine has evaporated, add 2 or 3 tablespoons of fried tomato. Mix it all together, and then let it stand for a few minutes.
- When the sauce has rested a little, add the stock cube or glass of bouillon. Add milk to the almond sauce and use the wooden spoon to stir. When all the ingredients are in and well mixed, pour the mixture into a blender-safe bowl, and whisk it. Depending on its consistency, you can add more milk or water to the sauce, or leave it like this.
Finally, add a few almond pieces to the sauce for decoration and even mix them into the sauce to give it a crunchy texture. Tuck in!
