Tricolour of peppers with quinoa

Ingredients
- 3 tricolour peppers
- Rosemary
- 150 g quinoa
- 100 g de feta cheese
- 1 tray mushrooms
- Olive oil
- Salt and pepper
- 1 clove of garlic
Step by step recipe
1. Preheat the oven to 180 ºC.
2. Cut the peppers in half.
3. Place them in an ovenproof dish, drizzle them with oil and add salt and pepper.
4. Place them in the oven for 20 minutes at 200 ºC.
5. Boil the quinoa for 10 minutes and, once cooked, take it from the heat and leave it to rest for 5 minutes in the water.
6. Meanwhile, cut the garlic clove and sauté it in a frying pan with hot oil together with the mushrooms and rosemary. Once cooked, add the quinoa and stir well.
7. Fill the peppers with the quinoa and mushrooms, sprinkle the feta cheese on top... And enjoy!
