- 100 g condensed milk
- 200 g mascarpone
- 200 g Jijona nougat
- 200 ml whipping cream
- 1 egg for glazing
- 30 g sliced raw almonds
- icing sugar
For the preparation, follow these steps:
- Begin by making the cream. Grate the Jijona nougat into a bowl, then add the condensed milk and mascarpone. Mix all the ingredients thoroughly, whip the cream, and gently fold it in with smooth, enveloping movements. Cover the mixture with cling film and leave it in the fridge overnight.
- Preheat the oven to 180°C and take the puff pastry out of the fridge for about 15 minutes before baking. Unroll the sheet of puff pastry and cut it into three rectangles, each approximately 10 centimetres wide. Place the rectangles on a baking tray and brush the surface with beaten egg. Prick the pastry several times with a fork to ensure even baking. Next, sprinkle one of the rectangles with sliced almonds. Bake until the pastry has risen and turned golden, then set aside to cool.
- Spread half of the cream over one layer of puff pastry, place another layer on top, add the remaining cream, and finish with the almond-topped layer. Finally, generously dust the top with icing sugar.

- 1 sheet of puff pastry
- 200 g fresh salmon
- 100 g Philadelphia cheese
- 1 beaten egg
- salt and pepper to taste

The steps are as follows:
- Preheat the oven to 200°C.
- Roll out the puff pastry sheet on a flat surface.
- Spread it with Philadelphia cheese and sprinkle with salt, pepper, and dill to taste.

- 1 rectangular sheet of puff pastry
- 150 g courgette
- 150 g aubergine
- 150 g red pepper
- 150 g of green asparagus
- 50 g grated cheese
- a pinch of oregano
Follow these steps:
- Wash and dry the vegetables thoroughly. Cut off the ends of the aubergines and discard them. Slice the aubergines lengthways into approximately 1 cm thick slices. Then, cut each slice into strips and each strip into cubes.
- Heat a little extra virgin olive oil in a large frying pan and sauté the aubergine for about 10 minutes over low heat. Add a little water to prevent the aubergine from sticking to the bottom of the pan.
- While the aubergine is cooking, remove the stem and seeds from the pepper. Cut it into strips about 1 cm wide and then into cubes.
- Add the pepper to the pan with the aubergine. Stir and sauté for five minutes. You can add a little more oil, but it’s not recommended to avoid making the mixture too greasy.
- Next, trim the tough, white ends of the asparagus. Cut the asparagus into 1 cm pieces and add them to the pan. Stir-fry for another five minutes.
- Finally, trim the ends of the courgette and discard them. Repeat the process of slicing it into rounds, then into strips, and finally into cubes. Add the courgette to the pan and sauté for another five minutes. Season with salt and pepper to taste.
- Remove the vegetables from the heat and allow them to cool completely before filling the puff pastry. To do this, roll out the puff pastry and divide it into three equal parts, marking two parallel lines with the blunt side of a knife.
- Cut diagonal strips on the right and left sections of the pastry, leaving the centre intact, as this will be where the filling goes.
- Spread half of the grated cheese in the centre of the pastry and top it with the vegetables. Sprinkle with dried oregano.
- Close the puff pastry into a braid by alternating the pastry strips from the left side with those from the right, over the filling.
- Finally, brush the pastry braid with beaten egg and sprinkle the remaining grated cheese on top. Preheat the oven to 200°C with both top and bottom heat, and place the vegetable braid in the oven. Bake for about 20 minutes, until the pastry is golden, then remove. Let it cool for a few minutes before serving.

For the preparation, follow these steps:
- Place one sheet of puff pastry on a piece of baking parchment. Use a rolling pin to roll it out evenly.
- Spread the cocoa cream over the surface of the pastry, leaving a 2 cm border without filling. If you warm the cocoa cream beforehand, it will be easier to spread on the puff pastry.
- Cover the first sheet with the second sheet of puff pastry, which you have also rolled out on a piece of baking parchment.
- Place a glass in the centre of the two sheets to serve as a guide when cutting the portions. Use the tip of a knife to cut the pastry into 16 parts, making the cuts from the base of the glass to the edge of the pastry.
- Next, twist each ‘petal’ in the same direction. Then, brush the surface of the flower with a beaten egg.
- Preheat the oven to 200°C and place the pastry, still on the baking parchment, onto the oven rack. Bake at 200°C with both top and bottom heat for 25 minutes, until golden and crisp, then serve your delicious chocolate-filled puff pastry.
