Pumpkin cake is a simple recipe that the whole family will love. At this time of year, what could better than taking advantage of the pumpkin to make a delicious dessert.

In addition to providing flavour and colour, pumpkin has enough moisture to keep the cake juicy for several days. This pumpkin cake is perfect to accompany breakfast or a snack, along with a glass of milk or hot coffee. Shall we give it a go?

Pumpkin cake recipe 

We will follow the same process as with a yoghurt cake, but we will also add roasted pumpkin.


Ingredientes:

- 1 natural yoghurt (125 g)
Flour (3 measures of yogurt)
Sugar (1 measure of sugar)
Oil (1 measure of yoghurt)
3 eggs
300 g pumpkin
30 g of fresh ginger
1 sachet of yeast powder (16 g)
Butter or oil to spread on the mould

How to make:

1. Cut the pumpkin into small pieces and cover it with a lid of greaseproof paper. Put it in the microwave for three minutes and then take it out.

2. Being careful not to burn, separate the pulp from the skin and heat it in the microwave at maximum power for 5-6 minutes, until tender.

3. Mash the pumpkin with a fork, break it up or leave it in larger pieces, as you wish. Put to one side

4. Put the yoghurt in a bowl and place the container to one side, which can be used as a measure for the rest of the ingredients.

5. Preheat the oven to 180ºC.

6.  Place sugar and eggs in a large bowl and beat vigorously. You can use a whisk.

7. Add the oil and yoghurt and continue to beat until the mixture is even. Grate a little lemon skin and add it to the mixture.
8. Add the yeast and flour through a sieve and finish mixing.

9. Peel the fresh ginger and mix it in, adding it to the mixture along with the pumpkin.

10. Cover the mould with oven paper or add some oil or butter, then put the dough into it.

11. Place the tray in the middle of the oven and keep the temperature at 180 °C. Place the mould in the oven and bake for about 25 minutes.

12. To check if the cake is ready, stick a toothpick into it and if it comes out with nothing stuck to it, you can turn off the oven and take out the cake.

13. Let it rest for 10 minutes before removing it from the mould.


Healthy pumpkin cake

If you are looking for a ‘healthier’ option for your cake, you can replace some of the ingredients. For example, for the flour, instead of wheat, you can use spelt, oats or another whole grain. Regarding sugar, some people replace it with panela or 1 or 2 droplets of sweetener.
