The cheese from Burgos is notable among the fresh cheeses. It takes its name from the Castilian city of León, whose low temperatures and altitude favoured its appearance at the weekly markets where local inhabitants sold their cheeses, since it could be preserved in good condition without the need for curing.

As it has such a mild and light flavour, it combines with almost any type of lettuce, various types of leafy vegetables (spinach, chard, endive, chicory...) with nuts, forest fruits, raisins, seafood or avocado, even with orange or apple. Grilled fresh cheese
Fried fresh cheese, typical of the Region of Murcia and Albacete, is a delight anywhere in Spain and very easy to prepare. Although you can use any type of fresh cheese, goat's cheese appears to have a better consistency and looks better. If you want to melt with its flavour, take note:
Ingredientes:
- Pieces of fresh goat cheese
- Ripe tomatoes
- Half green pepper
- Half red pepper
- Virgin olive oil
- Salt
Instructions:
- Cut peppers into medium-sized pieces and fry in a good amount of olive oil. Put aside.
- Cook the tomatoes by grating them into a frying pan so that they release their liquid. Season to taste and add a little sugar to get rid of the acidity, then simmer.
- Mix the fried tomato with the peppers and set aside.
- Fry the fresh goat’s cheese in plenty of hot virgin olive oil. The pieces of cheese should be roughly a centimetre thick.
- You can also cook the cheese in breadcrumbs, after coating with beaten egg, although this is different to the original recipe for the fried cheese from the Murcian Highlands.
