Recipe for roast chicken

Roast chicken is very easy to make. Add prunes and olives to add a special flavour. And if you have any left over, use it for other dishes.

INGREDIENTS (for 2 people):

  • Chicken leg quarters  
  • Green pitted olives 
  • Pitted prunes  
  • Black pepper
  • Capers Oregano
  • Garlic cloves 
  • Bay leaves 
  • EVOO
  • Salt
  • 1 glass water

ELABORACIÓN:

1. Preheat the oven for at least 10 minutes at 200 degrees

2. Meanwhile, prepare the chicken and place it on a baking tray.

3. Then add the prunes, olives, garlic bay leaves, capers, salt, oregano, black pepper and a drizzle of extra virgin olive oil.

4. Add a little water to the tray, more or less one glass.

5.  Next, cover the tray with aluminium foil and roast for 1 hour at 200 degrees.

6. After 30 minutes in the oven, remove the aluminium foil and finish roasting until it is cooked thoroughly, which will be approximately another 30 minutes, depending on the power of each oven.

If you have any chicken left over...

  • You can use it to make other recipes like chicken croquettes. The recipe is simple: shred the leftover chicken and add a light bechamel sauce.
  • You can also use it for a chicken sandwich. To do so, cut the cold chicken into strips and add tomato, lettuce and cheese.
