Strawberry tiramisu recipe

Ingredients:

For the strawberry juice 

  • 100 g strawberries  
  • 250 ml water
  • 30 g sugar 

For the mixture

  • 1 sachet neutral gelatine powder  
  • 400 ml whipping cream
  • 100 g sugar
  • 500 g mascarpone cheese

To assemble the tiramisu  

  • 500 g strawberries
  • 12 sponge fingers

Method:

1. First make a strawberry juice to soak the sponge fingers. Add 250 ml of water into a blender cup, add 100g of chopped strawberries and 30 g of sugar and blend until you get a homogenous mixture. Set side.

2. Add the sachet of neutral gelatine powder to a small bowl and add some whipping cream. Dissolve the gelatine fully in the cream and set aside.

3.  In a large bowl, metal if possible, add 300 ml of whipping cream. To obtain a better result, we recommend the cream is very cold, you can place it in the freezer for a while before hand so it whips better.

4.  Whip the cream and gradually add the 100 grammes of sugar to the mixture.

5. When the cream is whipped, add the mascarpone cheese and the mixture of cream and gelatine that you made earlier. Stir thoroughly so everything mixes together and set aside.

6. Next, clean the strawberries and cut into slices to start to assemble the strawberry tiramisu.

7. Firstly, you need to soak the sponge fingers in the strawberry juice you made earlier. Next, place them in a bowl in an orderly fashion.

8. Then add a layer of the whipped cream and mascarpone mixture.

9. Add the chunks of strawberries you chopped earlier and repeat the process: layer of soaked sponge fingers and cream and mascarpone.

10. Finish off the strawberry tiramisu with a layer of cream and mascarpone.

11.  Decorate the top of the tiramisu with half strawberries cut vertically and a few mint leaves on top.
