Avocados stuffed with prawn cocktail

Ingredients for 2 people:

2 avocados - 8 boiled prawn tails - One tbsp. chopped coriander - Juice and zest from 1 lemon   - A few drops of orange juice - ½ red onion - Gourmet shoots for decoration - Freshly ground salt and pepper

PREPARATION

No cooking skills are required to scoop out the flesh from the avocados, you can give a spoon to the kids and get them to do it. They’ll love doing this!

1. We stand the avocados upright and cut them in half and pass them on to the kids to remove the flesh. Then we cut up the flesh and put the skin on one side because that is what we are going to use as bowls for the cocktail.
2. Then, we dice the onion, add salt, and drizzle lemon and orange juice over it in a bowl. We add the avocado, boiled prawns, coriander, salt and pepper, and gently mix.
3. We stuff the avocados and decorate with gourmet shoots.
