Edible crab au gratin

Ingredients for 4 peoples:  

 4 edible crabs, 1 onion, 1 clove of garlic, 300 g whole milk, 30 g flour, Parsley, Breadcrumbs, 2 egg yolks, 10 g butter, EVOO Salt and pepper

PREPARATION

1. Cook the edible crabs for 12-15 minutes per kg. Whencool, remove the meat and reserve the previously washed shell.

2. Preheat the oven to 200ºC

3. Fry the chopped onion and garlic for 5 minutes overmedium heat, add the flour, fry for a few minutes and add the milk. Stirconstantly until the béchamel sauce thickens.

4.Off the heat, add the 2 egg yolks, the crab meat and the chopped parsley.

5. Fill the shells and sprinkle the top with breadcrumbsand a little butter.

6.Bake at 200ºC for 15 minutes.
