Lobster stew
Ingredients for 4 people:
2 lobsters - 1 large onion - 1 Italian green pepper - 2 large ripe tomatoes -
1.5 l fish stock - 200 ml brandy - 25 g flour - 100 ml olive oil - 2 ñora peppers - SaltIngredients for the mix:
3 garlic cloves - 30 g almonds - 60 g fried bread

PREPARATION
1. Prepare the lobsters by cutting and separating the head from the body.
2. Sauté all the chopped vegetables and the grated tomato in a pan with virgin olive oil. When well-cooked, crush and put on one side.
3. Place the lobsters in the same pan, add a bit more oil and sauté them. When the colour changes, add the brandy and carefully flambé it.
4. Remove all the pieces of lobster except for the heads, add the mashed vegetables and mix well.
5. Add the flour, the ñora flesh and continue to stir.
6. Add the fish stock and leave to cook for about 30 minutes.
7. For the mix, mash the garlic, fried almonds and fried bread slices. Add a little stock to continue to work it well and add to the pan.
8. Leave everything to cook together for about 10-15 minutes, then add the pieces of lobster before serving.
