Cod confit with tomatoes

Ingredients for 4 people:

4 cubes of cod (approximately 200 g each one) - 12 L mild virgin olive oil - 1 garlic - Rosemary and thyme - 200 g cherry tomatoes - Salt flakes and freshly ground pepper

PREPARATION

We will need a skilful collaborator to peel the garlic and give them a good “thump” to break them.

1. We put the oil in a pan and heat it to 80º. We add the peeled and crushed garlic, the cherry tomatoes, rosemary and thyme.
2. We leave on the heat for 35 minutes, maintaining the temperature, and then we add the cod loins with the skin facing down (they must be totally submerged). We cook everything for another 15 minutes and turn off the heat, but it is important to keep them in the oil until we are going to serve them.
3. Just before eating, we put them on a grill or in a hot frying pan to seal them.
4. To finish, we sprinkle with salt flakes and a touch of pepper
5. To make the dish more colourful, we accompany with cherry tomatoes.
