Roast sea bass with creamed leeks 

Ingredients for 4 people:

1 kg clean sea bass in fillets - 100 ml mild olive oil - 1 level tsp. paprika - 1 level tbsp. chopped parsley - 2 grated garlic cloves - Freshly ground salt and pepper. CREAMED LEEKS: 450 g leek stalks (the white part) - 300 ml cooking cream or evaporated milk - 50 g butter - 200 g mayonnaise - Juice of ½ lemon

PREPARATION

You will need more than two hands for this recipe. Get someone to give you a hand to grate the garlic and chop the parsley, on the one hand, and to prepare the mayonnaise mix with lemon, on the other.

1. We season the sea bass fillets and wrap them in plastic film. We put them in the fridge for 20 minutes (this makes them juicier).
2. Meanwhile, we boil the leek stalks in salted water for 20 minutes, we cool them down and cut them in half. We season them and sprinkle with cooking cream, we oven bake for 35 minutes at 170º and put on one side.
3. We mix the oil with the paprika, parsley, grated garlic and smear it on the fish. We oven bake for 15 minutes at 100º and then raise the oven temperature to 180º for another five minutes.
4. Finally, we present the sea bass on the plates with the creamed leeks and lemon mayonnaise. Delicious!
