Roasted pumpkin seeds

Ingredients (4 people)

200 g pumpkin seeds
40 g virgin olive oil
10 g de semillas de sésamo
Curcuma
Pepper
Ground cumin
Salt


Method

Remove the seeds from the pumpkin and wash them well to remove the remaining pulp that can be stuck to them. Then leave them to dry on kitchen paper.

Once the seeds are dry, mix the spices in a bowl: curcuma, pepper, cumin and salt. Add the seeds to season them and place them on a tray to bake them, lightly brushed with olive oil. Place the tray in the oven, preheated to 180°C for 15-20 minutes, taking care to not burn them and turning the tray if necessary.

Vegetarian stuffed pizza

Ingredients (4 people)

250 g flour
40 g virgin olive oil
8 g fresh yeast
150 ml water
150 g tomato sauce
80 g mozzarella cheese

120 g mushrooms
100 g artichoke hearts


Method

Mix the flour with the water, salt, yeast and oil. Knead it until you make a smooth ball which does not stick. Leave to rise for at least half an hour and roll it out with a rolling pin until reaching the desired shape and thickness.

Once you have rolled out the dough, spread the tomato sauce over the whole surface. Then place the sliced mushrooms, the chopped artichoke hearts and the cheese in the centre of the dough.

Carefully fold the dough in half, avoiding any holes in the dough. Firmly seal the edges, place on a tray and bake for 12-15 minutes at a temperature of 225 ºC. Then remove from the oven, leave to cool a bit and serve!

Espuma de limón

Ingredients (4 peolple)

180 ml lemon juice
250 g cottage cheese
3 eggs
20 g walnuts

1 ml vanilla essence
2 g baking powder

5 g lemon rind

1 ml sweetener


Method

Crumble the cottage cheese and chop the walnuts.

Mix both ingredients with the lemon juice, vanilla essence, egg yolks and baking powder.

Stir and add a tablespoon of sweetener.

Whisk the egg whites, add the rest of the ingredients and stir.

Pour the mixture into individual moulds.

Cook in a bain-marie for 15 to 20 minutes. Then remove them and leave to cool.

Sprinkle the lemon rind and the rest of the sweetener on top.
