Here are the five favourites of Begoña Rodrigo, chef and owner of La Salita, winner of the first edition of Top Chef, tireless traveller, Amazon, mother and hard worker until exhaustion.
She didn’t have a chef’s vocation but had a special ‘hunger’ and immense curiosity which made her drop everything and leave for Holland where her training in the gastronomical world began.
Here are her five favourites:
PICKLES (ALL OF THEM)
Once when I was little I read in one of those things that is sure to be false, that vinegar, as well as killing red globules, fed the cells which encourage good moods; it’s sure to be false but I believed it and I eat them uncontrollably to stabilise my bad moods.
LIMES/LEMONS (CITRUS FRUIT IN GENERAL)
My favourite catalyser, I eat and cook with them in any of their formats, they can turn any dish around as long as they are used correctly.
FRESH HERBS
I’m from the mountain, I spent all my summers in Sot de Chera with lemon thyme, sorrel, rosemary... They were part of the surroundings, now along with lemon verbena, coriander, basil, parsley, tarragon, sage, mint, orange blossom... they are part of the bases of my cooking, they’re like a stamp of identity, I think if more people used them diseases such as cholesterol and diabetes would be much more under control.
WINE
Being able to enjoy a nice glass of wine is a lifestyle, I’m more and more a fan of southern wines, in general all oloroso wine and depending on the moment, sparkling. It’s also an essential in my cooking, especially in stock and sauces.
SALTED BUTTER
My mother always had salted butter and bitter orange marmalade for breakfast and I never understood why.. now I do, I use it and eat it every day, I’ve been experimenting with it and several flavours lately with very good results.
